Mexican Street Corn

If you haven’t tried Elote (aka Mexican street corn), then you don’t know what you’re missing. Try making this at your next summer barbecue or taco night and see how fast they’ll be devoured.



What is Elote?

Elote is basically grilled corn on the cobb coated in a mayonnaise, crema, cotija cheese mixture. Its a popular snack served by street vendors in Mexico, hence the name street corn. Now I completely understand if mayo isn’t your first choice of condiment, but with this recipe, you won’t even be able to tell it’s there.



Pro Tip:

When shucking the corn, do not completely remove the husks. simply pull them down so they can be used as a handle. If you’ve already removed the husks, no problem! Just use wooden skewers, but be sure to soak them in water for at least 10 minutes before grilling.

Ingredients
  

  • 4 ears Corn shucked
  • 1/2 cup Mexican Crema
  • 2 Tbsp Mayo
  • 1 cup Cotija Cheese crumbled
  • 1/2 tsp Chili powder
  • 1/4 tsp Garlic powder
  • 1/4 tsp Cumin
  • 1/4 tsp Salt
  • Lime wedges and cilantro for garnish

Instructions
 

  • Preheat grill to medium high heat.
  • In a small bowl, mix the crema, mayo, chili powder, garlic powder, cumin, salt
  • Grill the corn about 15 minutes, while turning often, until nicely charred
  • Remove the corn from the grill and place onto a baking sheet
  • Brush or spoon on mayo mixture and coat with crumbled cotija cheese
  • Garnish with cilantro and serve with lime wedges
  • Enjoy!

Notes

  • If unavailable, Sour cream can be substituted for Mexican crema.
  • If unavailable, feta or parmesan can be substituted for cotija cheese.

    Tried this last night and it was amazing! Thanks for sharing! I was wondering though, what is in the cheese mixture in step 5? I assumed it was just the cotija crumbled right?
