Italian Bolognese Sauce
Italian bolognese is a recipe for a meaty ragu served with pasta. It gets its name from the region of Italy where it originated, Bologna. Traditionally, bolognese sauce is paired with tagliatelle pasta. However, in this recipe I used the next best thing, fresh fettucine.
Ingredients
Bolognese is composed of some type of ground meat, stewed tomatoes, wine, cream, vegetables, and seasonings. You start by sweating the carrots celery and onions then proceed to sauteing the ground meats. These are typically ground beef and italian sausage, but you can also use lamb, veal or whatever your preference of meat is.
After browning the meat, the next step is to drain the excess fat or it will result in an oily finished product. Next, you’ll add your tomatoes, wine, cream and spices and stew for a few hours in order to develop the maximum amount of flavor.
This sauce can be served over your choice of pasta. Many people choose spaghetti or even angel hair. Serve your bolognese with a sprinkle of fresh grated parmesan and enjoy!
Italian Bolognese Sauce
Ingredients
- 1 lb Italian Sausage
- 1 lb Ground Beef
- 1 12 oz can Whole plum tomatoes
- 1 6 oz can tomato sauce
- 1 12 oz can crushed tomatoes
- 1 whole onion diced
- 2 medium sized Carrots diced
- 2 Tbsp minced garlic
- 2 stalks celery diced
- 2 bay leaves
- 2 Tbsp chopped basil
- 1 tbsp lemon juice
- 3 tbsp sugar
- 1 tbsp olive oil
- 1/4 cup heavy cream
- 1/4 cup milk
- 1 cup parmesan cheese
- 1/4 cup white wine
- 1 tbsp salt and pepper add more if needed
Instructions
- In a large pot over medium heat add olive oil and, sweat onions, carrots, celery until translucent
- add garlic and cook for one minute
- add in beef and sausage and brown until fully cooked
- add all other ingredients
- simmer for 1-3 hours. Then, taste and adjust flavors accordingly
- serve over fresh pasta and top with parmesan cheese
